Campofilone, a little town in the province of Ascoli Piceno, is synonymous with pasta; the macaroni (also called “capellini”) are so delicate that it melts in your mouth. They are mixed only with flour and eggs, worked by skilled hands, which smoothed with a rolling pin into thin layers, rolled and cut as thin as possible.
